Breakfast tastebud cheers!
This will work for the Ketogenic Diet and the Paleo Diet.
Ingredients: (you can leave some off but include the eggs and jicama tortillia!) For 2 servings:
4 Jicama Tortillias
3 Pasture-raised Eggs
1/2 cup Chopped Papaya
1/4 Cup Chopped Red Bell Pepper
1/4 Cup Chopped Nopalitos (Cactus)
Sliced or chopped Onion (optional)
Put chopped goodies - Avocado, Papaya, Red Bell Pepper and Nopalitos in a serving dish.
Scramble eggs (or cook how you like to eat them)
Gently heat Jicama Tortillas, about 5 seconds each side on low heat until they are just barely warm. This helps keep them from breaking if you want to roll them up! Place eggs on top. Garnish with onion if you like!
Serve with the bowl of chopped goodies for adding just before eating! Or arrange all on a plate for a tastebud sensation that is low in carbs, vitamin and enzyme rich, and healthy!
